You will also notice the ellipsis character (…) at the end of the Gantt bar for this task, indicating there is uncompleted Remaining Duration on the task. Since the task is fixed duration, Project doesn’t reduce the total duration when the work is completed earlier.
So, I would recommend you to begin looking for an ellipsis character at the end of any Gantt bar for an in-progress task.

Sometimes it is a set of events as performed by the user and sometimes it's just finicky.
Once done, Microsoft Project will shorten the Duration to the correct time span for the completed work, will reduce the Remaining Duration to 0d, will enter the correct Actual Finish date, and will mark the task as 100% complete.
In my earlier post "The Purpose of ‘% Complete’ field", I mentioned how % Complete, % Work Complete and Physical % Complete are different from each other. Clear "Updating Task Status updates Resource Status" checkbox in Calculation options for this project: section.
I can't fill in a number for percent complete, but this does not happen to all tasks. Whenever i give, for exemple 75% complete, sometimes the gantt bar doesn't change and in another task it does change. and there is also different effort driven statuses that may be causing this but I would like to check it out to ensure there is not a bug.

It should auto update % complete for task and roll it up as well. It moves the finish date of the overall project and changes task dates for other tasks.However I believe it does affect the task effort, since it reduces the outstanding amount to zero.
